½ cup cornmeal

¼ cup grated Parmesan cheese

½ tsp garlic powder

¼ tsp ground black pepper

3 medium zucchini, cut into 2-inch pieces

Cooking Methods

  1. Preheat oven to 375°F / 190°C. Coat a baking sheet with cooking spray.
  2. In a small bowl, whisk together the egg whites. In a separate bowl, mix cornmeal, Parmesan cheese, garlic powder and ground black pepper.
  3. Dip each zucchini piece in egg whites and then in cornmeal mixture to coat.
  4. Evenly distribute the coated zucchini over the baking sheet and spray zucchini with cooking spray. Bake for 20 - 25 minutes or until golden brown.
