Easy Bruschetta Recipe

 

Ingredients

Cooking spray

2 tbsp olive oil, divided

2 tsp minced garlic

4 tbsp balsamic vinegar

¼ tsp salt (optional)

⅛ tsp ground black pepper

2 cups tomatoes, seeded and chopped

½ cup onion, finely chopped

¼ cup fresh basil, chopped

1 whole wheat baguette

Cooking Methods

  1. Preheat oven to 375°F / 190°C. Coat a baking sheet with cooking spray.
  2. Add 1 tbsp olive oil to a small sauté pan over medium heat. Add garlic and sauté for 1 minute.
  3. In a small bowl, combine garlic mixture with balsamic vinegar, salt (optional), pepper, tomatoes, onion and basil. Let mixture marinate in refrigerator for 30 minutes.
  4. Slice whole wheat baguette into 18 pieces. Lightly brush remaining olive oil on each piece. Line baguette pieces on baking sheet and bake for 10 - 12 minutes or until toasted. Top each baguette piece with equal amounts of tomato mixture.
