Shrimp-Stuffed Mushrooms Recipe Low Carb

 

Ingredients

20 large mushrooms

1 tsp olive oil

1 cup raw shrimp, chopped

2 tbsp onions, small dice

¼ cup red peppers, small dice

1 large egg

¼ cup bread crumbs

1 tbsp chopped chives

1 tsp lemon juice

Cooking Methods

  1. Preheat oven to 375°F / 190°C.
  2. Remove stems from mushrooms and finely chop the mushroom stems. Set aside mushroom caps.
  3. Preheat a sauté pan and add olive oil. Sauté shrimp until cooked, about 4 minutes. Remove shrimp from pan.
  4. Add chopped mushroom stems, onions and red peppers to the pan and stir until cooked. Remove from heat.
  5. Place shrimp and vegetable mixture in a food processor and chop. Transfer mixture into a bowl and fold in the egg, bread crumbs, chives and lemon juice. Evenly scoop shrimp mixture into mushroom caps.
  6. Arrange stuffed mushroom caps in a baking dish. Bake for 25 - 30 minutes. Serve hot.
