1 (10-oz) pkg frozen chopped spinach, thawed and drained

2 (13.5-oz) cans artichoke hearts, drained and chopped

1 cup nonfat plain yogurt

¼ cup light cream cheese with chives and onions

¼ cup light mayonnaise

½ tsp salt (optional)

¼ tsp ground black pepper

2 tbsp grated Parmesan cheese

Cooking Methods

  1. Preheat oven to 375°F / 190°C. Coat an 8-inch round casserole pan or deep pie pan with cooking spray.
  2. In a large bowl, combine all ingredients, except Parmesan cheese. Mix well. Spread mixture evenly in casserole pan. Top with Parmesan cheese.
  3. Cover and bake for 30 minutes. Uncover and bake 10 minutes more.
