Mini Breakfast Pizza Recipe

 

Ingredients

¼ cup Splenda

½ tsp ground cinnamon

3 whole wheat pita pockets

Cooking spray

1 cup prepared sugar free, fat free vanilla pudding

1 ounce light cream cheese

1 cup strawberries, sliced

1 cup blueberries

2 kiwi fruit, peeled and sliced

Cooking Methods

  1. Preheat oven to 350°F / 175°C.
  2. In a small bowl, mix together Splenda and cinnamon.
  3. Split the pitas in half, making two round halves for each individual pita. Place pitas on baking sheet, with cut side up. Spray each pita with cooking spray. Sprinkle each pita evenly with cinnamon and Splenda mixture. Bake pitas for 10 minutes. Set aside to cool.
  4. In a small bowl, blend pudding and cream cheese together until smooth. Spread 2 tbsp pudding mixture on each pita.
  5. Top each pita with equal amounts of fresh berries and kiwi slices.
