Sweet Potato Hash Recipe

2 sweet potatoes

2 tbsp canola oil

½ cup sliced onions

½ cup sliced red peppers

1 tsp salt

½ tsp pepper

⅛ tsp cayenne pepper

½ tsp cinnamon

Cooking Methods

  1. In a pot of boiling water, boil whole sweet potatoes until cooked but still firm, about 15-20 minutes. Remove skins and cut to a medium dice. Set aside.
  2. Heat a large skillet and add 2 tsp canola oil. Sauté onions until lightly browned. Add red peppers and continue to cook. Remove from skillet and set aside. Add remaining canola oil and sweet potatoes to skillet. When sweet potatoes are browning, return onions and red peppers to skillet. Continue to cook until sweet potatoes have browned. Season with salt, pepper, cayenne pepper and cinnamon. Serve hot.
