Fat-Free Apple and Apricot Tea Cake Recipe

1 tbsp margarine
2 cups self-raising flour
1 egg, beaten
3/4 cup skim milk
2 tbsp sugar
450g canned unsweetened pie-apple filling
210g canned unsweetened apricot halves,
drained
1/2 tsp ground cinnamon

Cooking Methods
In a bowl, rub margarine into flour
until crumbly. Combine egg, milk and sweetener. Add to dry
ingredients and stir until just combined.
Pat out half the mixture over base
of lightly greased 20cm spring-form tin. Spread with apples. Scatter
apricots over top. Sprinkle with cinnamon and a little extra
sweetener to taste.
With floured hands, pat out
remaining dough into a 20cm circle on greaseproof paper. Turn onto
filling, then press gently to seal. Remove paper. Bake in a
moderately hot oven 190 degrees Celsius until cooked through and
browned, for 50 to 60 minutes.
Cool for about 15 minutes in tin.
Remove side of tin and serve warm.
