1 tbsp lemon rind, finely grated

1/2 cup natural oat bran

2 tbsp sugar

60g margarine

1/2 cup sultanas

1 egg, beaten

1 cup skim milk

Cooking Methods

  1. Sift flour, then stir in rind, oat bran and sugar.
  2. Rub margarine through flour mixture with fingertips.
  3. Add sultanas, egg and enough milk to make a stiff but moist batter.
  4. Spoon tablespoonfuls of batter onto a lightly greased or non-stick baking trays.
  5. Bake in hot oven 400 degrees for 25-30 minutes. Serve warm.
