Low-Fat Verna's Date Bran Cake Recipe Low Carb

 

Ingredients

1 cup Kellogg's All Bran

1 cup water

1 egg, beaten

1 tbsp molasses

1/3 cup vegetable oil

1 1/2 cups plain flour, sifted

2 tbsp brown sugar

1 tsp baking powder

1 tsp baking soda

1 cup dates, chopped

Cooking Methods

  1. Soak All Bran in water with egg, molasses and oil for 30 minutes.
  2. Mix together dry ingredients and dates.
  3. Pour in bran mixture and blend well, but do not over-mix.
  4. Pour into a greased 21 cm loaf pan, then bake in a moderately hot oven at 375-400 degrees for 40-45 minutes or until top springs back when lightly pressed.
