Sparkling Raspberry-Citrus Fruit Cocktail Recipe Low Carb

 

Ingredients

3 large navel oranges

1 large lemon

1 lime

1 cup fresh raspberries or unsweetened frozen raspberries, thawed

2 tbsp superfine sugar

2 cups sliced strawberries

2 cups 1-inch cantaloupe or honeydew balls

4 medium peaches, peeled, pitted and sliced (about 2 cups)

½ cup sparkling water, chilled

Methods

  1. In a medium bowl, combine the zest from two of the oranges, the lemon and the lime, and the juice from all the oranges, the lemon and the lime. Add the raspberries and sugar. Crush the berries using a potato masher. Cover and refrigerate overnight.
  2. Pour the mixture through a fine wire mesh strainer into a serving bowl, discarding the solids. Add the strawberries, cantaloupe and peaches. Stir in the sparkling water just before serving.
