Preheat oven to 375ºF. Spray a
baking sheet with cooking spray.
Season the tenderloin with garlic
powder, cumin, red pepper, pepper and salt (optional).
In a small saucepan over medium
heat, add apricot preserves and cider; simmer for 3-5 minutes to form
a glaze. Brush 1/4 cup apricot glaze on both sides of the tenderloin
and transfer to a baking sheet. Bake for 40-50 minutes. Brush
remaining apricot preserves evenly over pork and bake for additional
10 minutes or until done.
Let pork sit for 10 minutes, slice
thinly and serve.
