Apricot-Glazed Pork Tenderloin Low Carb

 

Ingredients

Cooking spray

2 lb pork tenderloin

3/4 tsp garlic powder

1 tsp cumin

1/2 tsp ground red pepper (optional)

1/2 tsp ground black pepper

1/2 tsp salt (optional)

Apricot Glaze

1/2 cup sugar-free apricot preserves

2 tbsp apple cider

Methods

  1. Preheat oven to 375ºF. Spray a baking sheet with cooking spray.
  2. Season the tenderloin with garlic powder, cumin, red pepper, pepper and salt (optional).
  3. In a small saucepan over medium heat, add apricot preserves and cider; simmer for 3-5 minutes to form a glaze. Brush 1/4 cup apricot glaze on both sides of the tenderloin and transfer to a baking sheet. Bake for 40-50 minutes. Brush remaining apricot preserves evenly over pork and bake for additional 10 minutes or until done.
  4. Let pork sit for 10 minutes, slice thinly and serve.
