Chipotle Pork Enchiladas

 

Ingredients

1 tbsp olive oil

3/4 lb lean pork, diced

1 chipotle pepper in adobo sauce from can, chopped

1 tsp chili powder

1 tsp cumin

1 14.5-oz can fat-free refried beans

Cooking spray

10 (6-inch) corn tortillas

1/2 cup reduced-fat, shredded cheddar cheese

 

Sauce

2 8-oz cans no-salt-added tomato sauce

1 tbsp adobo sauce (from canned chipotle pepper)

1 tsp cumin

Methods

  1. Preheat oven to 350F.
  2. Add olive oil to a medium sauté pan over medium-high heat.
  3. Add pork and sauté 2-3 minutes. Add chipotle pepper, chili powder, cumin, and refried beans. Sauté 2 more minutes.
  4. In a medium bowl, combine tomato sauce, adobo sauce, and cumin.
  5. Spray a 9 x 13-inch baking dish with cooking spray. Fill each tortilla with a portion of the pork mixture (divided evenly among the 10 tortillas). Roll tortillas and place seam side down in the pan. Pour sauce over tortillas and distribute evenly. Top with cheese. Bake for 20 minutes.

Fun Facts / Cooking Tips

Chipotle peppers in adobo sauce are spicy. If you like your food less spicy, use half the amount called for in the recipe.
