Roast Lemon Chicken (Roasted Chicken Recipes) Low Carb

1 x 1.5kg chicken

1/4 medium onion, peeled

salt and pepper to taste

1/4 tsp paprika

1 orange

1/2 lemon

1/2 cup pineapple juice

1 tbsp soy sauce

Cooking Methods

  1. Place onion inside chicken cavity.

  2. Season cavity and skin with salt and pepper.

  3. Sprinkle chicken with paprika. then place in a roasting dish, breast side down.

  4. Squeeze juice from orange and lemon then place reserved peel inside chicken.

  5. Combine orange, lemon and pineapple juice with soy sauce and pour over chicken.

  6. Bake in a moderately hot oven 190-200 degree Celsius for 1 1/2 hours basting frequently. Turn chicken breast side up after one hour.

  7. Serve with baked potatoes, grilled tomatoes and zucchinis.
