3 cups water

3/4 lb lean boneless ham, cut into 1 1/2 cubes

1 cup chopped onion

1 cup chopped celery

2 bay leaves

1 tsp pepper

Cooking Methods

  1. Sort and wash the peas and place in a large saucepan. Cover with water and bring to a boil; cook 2 minutes. Remove from heat. Let soak for 1 hour and drain.

  2. Add the 3 cups water and remaining ingredients to the peas and bring to a boil. Cover, reduce heat, and simmer for 1 hour or until the peas are tender. Remove the bay leaves before serving.
