3 tbsp country Dijon or coarse-grained mustard

2 tbsp chopped fresh thyme or 2 tsp dried thyme, crumbled

4 medium garlic cloves, minced

1/2 tsp salt

1/2 tsp pepper

Vegetable oil spray

2-poind beef tenderloin, all visible fat and silver skin discarded

Cooking Methods

  1. Preheat the oven to 450 degrees.
  2. In a small bowl, stir together the mustard, thyme, garlic, salt and pepper.
  3. Spray a shallow roasting pan with vegetable oil spray. Put the roast in the pan. Spread the mustard mixture over the roast.
  4. Bake, uncovered for 25-30 minutes, or until desired doneness. Transfer the roast to a cutting board. Lightly cover with aluminum foil. Let stand for 10-15 minutes.
  5. To serve, cut the roast crosswise into thin slices.

The tough membrane sometimes found on the outside of tenderloin and flank steak is called silver skin. It should be removed before the meat is cooked. Slide a sharp knife under the silver skin, and cut it off. Leaving the silver skin on causes the meat to curl up during cooking.
