Old-Fashioned Chicken and Dumplings (Chinese Chicken Recipes)

1 3-lb stewing
chicken, skin removed (to yield about 1 1/2 lb of meat)
2 small onions, sliced
3 carrots. sliced
3 celery ribs with leaves
White pepper to taste
6 cups water
1 cup whole-wheat flour
1/2 cup unprocessed, uncooked wheat bran
1 tsp baking powder
1/8 tsp paprika
1/4 tsp salt
3 Tbsp butter

Cooking Methods
Simmer the chicken, onion, carrot, celery, and
pepper in the water until the chicken is done, about 1 1/2-2
hours.
Remove the chicken from the broth.
When it is cool enough to handle, bone the chicken
and cut the meat into bite-size pieces. Set aside the meat and 1/3
cup broth.
Combine the flour, 1/4 cup of the bran, baking
powder, paprika and salt. Cut in the butter. Add the the 1/3 cup
cooled broth to make a soft dough. Knead 3-4 times.
Turn the dough out onto a surface covered with the remaining bran. Pat out to
a 1/2 inch thickness. Cut into squares or biscuits.
Bring the remaining broth to a boil. Drop the dough,
once piece at a time, into the boiling broth, gently
stirring after each addition. Cook for 8-10 minutes.
Serve the chicken in a bowl, topped with dumplings.
