Tomato and Mushroom Chicken Casserole Recipe Low Carb

1 x 1.5kg chicken pieces

1 cup flour seasoned with salt and pepper

1 tbsp olive oil

1 medium onion, chopped

1 clove garlic, crushed

1/2 tsp thyme

425g canned tomatoes, drained

125g mushrooms, sliced

1 cup white wine

2 chicken stock cubes

salt and ground pepper to taste

1 bayleaf

Cooking Methods

  1. Toss chicken pieces in seasoned flour.

  2. Brown in hot oil.

  3. Add onion and garlic to the pan to saute.

  4. Transfer chicken and onions into a baking dish.

  5. Add remaining ingredients. Cover and bake in a moderate oven 180 degrees Celsius for 1 hour.

  6. Remove bayleaf before serving with steamed potatoes and spinach.
