Cooking spray

1 Tbsp canola oil

1 medium onion, peeled and diced

3 cups cooked turkey breast, diced

2 14.5-oz cans green beans, drained and rinsed

1 10.75-oz can reduced-fat cream of mushroom soup

1/2 cup fat-free sour cream

2/3 cup brown basmati/wild rice, cooked according to package directions

3/4 cup reduced-fat, shredded cheddar cheese

Cooking Methods

  1. Preheat oven to 350°F. Coat a 3-quart casserole dish with cooking spray.
  2. Heat oil in a small skillet over medium heat. Add onion and sauté until translucent, about 5 minutes. Remove from heat and transfer to a large bowl.
  3. Add all remaining ingredients to bowl and mix together until thoroughly combined.
  4. Pour mixture into casserole dish. Bake for 20-25 minutes or until bubbly. Let stand for a few minutes before serving.
