2 cups diced, cooked lean ham

3 qt water

2 medium onions, chopped

2 lb fresh okra, trimmed

1 large chapped bell pepper

2 28-oz cans whole tomatoes

1 cup fresh or frozen corn kernels

2 bay leaves

1 cup fresh of frozen lima beans

Fresh ground pepper to taste

This hearty diabetic soup is a signature dish in the South. There are many variations using different kinds of meat. You can still make a good soup even if you omit the ham, try soy patties instead. The ham makes this soup relatively high in sodium.
