Sweet Pea with Tarragon Soup Recipe Low Carb

1 tsp olive oil

1/2 cup diced onions

1/2 tsp salt

Pinch ground pepper

1 lb frozen peas

4 cups chicken stock

4 tbsp creme fraiche

2 tbsp fresh tarragon

Cooking Methods

  1. Preheat a medium pot over medium heat. Add olive oil and onions, saute until just translucent. Season with salt and pepper. Add peas and chicken stock, bring to a simmer.
  2. Simmer for about 10 minutes or until peas are soft but retain a bright green color. Remove from heat and blend liquid in a food processor or blender. If soup becomes too thick, thin out with more chicken stock.
  3. Once pea soup is pureed, strain through a sieve or fine-mesh strainer. Set aside.
  4. Pour pea soup into small serving bowls. Add a dollop of creme fraiche. Garnish with tarragon and serve.
