Sweet Potato Soup Recipe

Cooking spray

4 medium sweet potatoes

1 tbsp olive oil

2 medium carrots, diced

2 medium celery stalks, diced

1 small onion, diced

1/2 tsp dried thyme

1/2 tsp ground black pepper

32 oz reduced-sodium, fat-free chicken broth

1/4 cup fat-free half-and-half, heated

Cooking Methods

  1. Preheat oven to 375 degrees.
  2. Spray a baking sheet with cooking spray. Place sweet potatoes on baking sheet. Spray sweet potatoes with cooking spray. Bake for 45-50 minutes. Set aside to cool slightly.
  3. Remove skin from sweet potatoes and cut into chunks.
  4. Add oil to a large soup pot and heat over medium-high heat. Saute carrots, celery and onion for 3-4 minutes. Add remaining ingredients except half-and-half. Bring to simmer for 20 minutes.
  5. Pour soup in a blender and puree until smooth. Pour soup back into soup pot and stir in half-and-half. Serve warm.
