2 tbsp olive oil

1/2 cup celery, small dice

1/2 cup onions, small dice

1/4 cup baby carrots

1/4 cup corn

1 tbsp poultry seasoning

1 cup chicken stock

1 lb cooked turkey, diced

3 cups turkey gravy

1/2 tsp black pepper

2 tbsp fresh parsley, minced

Cooking Methods

  1. Preheat a medium pot and add olive oil. Add celery, onions and baby carrots, sweat them. When onions and celery begin to brown, add the corn, poultry seasoning and chicken stock. Bring to a simmer.
  2. Add diced turkey and gravy and reduce to a slow simmer. Simmer for 30 minutes or until carrots are soft and fully cooked.
  3. Season with black pepper and garnish with parsley. Serve immediately.
