Apple Sauce Oatmeal Cake Recipe

2 cups unsweetened apple puree

60g margarine

1 cup rolled oats

2 tbsp sugar

2 eggs, beaten

1 tsp vanilla

2 cups plain flour

1 tsp baking soda

1 tsp cinnamon

Cooking Methods

  1. Heat apple and margarine over a low heat until margarine has melted.
  2. Stir in rolled oats, then set aside for 5 minutes.
  3. Add sugar, eggs and vanilla alternately with dry ingredients.
  4. Turn batter into a lightly greased 20cm cake tin.
  5. Bake in a moderate oven 180 degree Celsius for 40 minutes or until skewer inserted in centre comes out clean.

Fun Facts / Cooking Tips

To make the apple puree, use 425g canned unsweetened pie apple mashed with a wooden spoon. With the sauce, it completes this healthy oatmeal diabetic cake.
