Curry Beef With Brown Rice

1 tbsp olive oil

1 lb sirloin beef, sliced and trimmed of all fat

1 cup shredded carrots

1/3 cup green onions, chopped

2 tbsp raisins

2 cups cooked brown rice



1/3 cup plain non-fat yogurt

1/4 cup fat-free half-and-half

2 tsp curry powder

1/4 tsp salt (optional)

1/2 tsp ground black pepper

  1. Heat oil in a large skillet over high heat. Add beef and sear 2 minutes. Remove beef from skillet and set aside.
  2. Add carrots, green onions, and raisins; sauté 2 minutes.
  3. In a small bowl, combine sauce ingredients. Add beef and sauce to skillet and simmer for 3-4 minutes. Serve over brown rice.

Fun Facts / Cooking Tips

Curry powder isn't spicy. If you want, add 1/4 tsp cayenne pepper to this recipe to give it some kick.
