Citrus Gelatin Salad Recipe Low Carb

2 envelopes artificially sweetened lemon or lime gelatin

2 2/3 cups water

1/2 cup vinegar

1 Tbsp lemon juice

1 1/4 cups thinly sliced cucumbers, peeled and cut

1 cup thinly sliced radishes

1/2 cup chopped celery

Nonstick cooking spray

Lettuce leaves

  1. Sprinkle the gelatin over 2/3 cup of water in a saucepan, let stand 1 minute. Cook over medium heat, stirring constantly until the gelatin dissolves. Stir in the remaining 2 cups of water, vinegar and lemon juice.
  2. Cool the gelatin, then fold in vegetables.
  3. Coat eight 1/2 cup molds with nonstick cooking spray and pour the gelatin into each mold. Chill until solid. Serve on lettuce leaves.
