1 bunch English spinach, torn

1 small Spanish onion, sliced

1/2 cup silvered almonds, toasted

1/2 cup mustard

2 tsp olive oil

1 tsp lemon juice

salt and ground pepper to taste

Cooking Methods

  1. Drain mandarin segments and reserve liquid.
  2. Place mandarin segments, spinach, onions and almonds in a salad bowl.
  3. Mix together reserved mandarin liquid with mustard, oil, lemon juice and seasonings. Chill, then pour over salad just before serving.
