Heatwave Curried Prawns (Spicy Shrimp Recipe)

500g shelled prawns

3 stalks celery, chopped

1/4 cup green olives, sliced

250g natural low-fat yoghurt

1 tbsp tomato chutney

2 tsp lemon juice

2 tsp curry powder

2 cups cooked rice

1/4 cup low-joule French dressing

1/3 cup parsley, chopped

Cooking Methods

  1. Cut prawns into bite-sized pieces if necessary and combine with celery and olives.

  2. Combine yoghurt, chutney, lemon juice and curry powder and pour over prawns.

  3. Toss the rice in French dressing and parsley

  4. Line a salad bowl with rice and fill center with curried prawn mixture.

  5. Serve well chilled with sliced cucumber and a green salad.
