Bean and Apple Salad Recipe

3 crisp red-skinned apples

1 tbsp lemon juice

440g canned bean mix

3 stalks celery, sliced

200 mg natural low-fat yoghurt

2 tbsp low-oil mayonnaise

salt and pepper to taste

Cooking Methods

  1. Halve and core apples. Do not peel. Cut one half into slender wedges, dice the remainder.
  2. Sprinkle lemon juice over apples, to prevent browning.
  3. Combine diced apples, beans and celery in salad bowl.
  4. Mix yoghurt with mayonnaise and seasonings. Pour over salad. Toss well.
  5. Decorate with apple wedges. Chill well before serving.
