Baked Stuffed Flounder (Baked Fish Recipes)

 

Ingredients

2 Tbsp canola oil

1/4 cup finely chopped celery

1/3 cup finely chopped onion

1/4 cup finely chopped bell

1/4 lb cooked shrimp, diced

1 tbsp chopped parsley

1 tsp finely chopped pimento

1/2 tsp paprika

1/2 tsp Worcestershire sauce

1/2 tsp Beau Monde seasoning

2 Tbsp dry sherry

1/8 tsp cayenne pepper

1 cup bread crumbs

4 small flounder, boned, or 1 lb filets, very thin

2 Tbsp lemon juice

Fresh ground pepper to taste

1/4 cup fine bread crumbs

Cooking Methods

  1. Heat the oil in a skillet and saute the celery, onion, and bell pepper until tender. Add the remaining ingredients up to the 1 cup of bread crumbs and cook over low heat for l0 minutes. Add the bread crumbs and mix well.

  2. Preheat the oven to 375 degrees. Stuff each fish with 1/4 of the dressing or spread it over each filet. Roll and fasten with toothpicks. Place the fish in a nonstick baking pan and season with lemon juice and pepper. Sprinkle the bread crumbs over the fish. Bake for 25-30 minutes.
