Combine water, wine, vegetables, herbs and seasonings
in a large saucepan to form stock. Bring to the boil then simmer for
1 hour.
Place whole fish in a poaching pan, pour over coolled
stock. Cover and simmer for 15-20 minutes or until fish is cooked.
Serve whole on a platter either hot or cold,
accompanied by whole steamed baby potatoes, cucumber sliced thickly
and dressed with light mayonnaise or sour cream, and a sprinkling of
paprika and fresh dill.
