Low-Fat Tuna Lettuce Rolls Recipe Low Carb

425g canned Greenseas tuna, drained

2 stalks celery, finely chopped

1/2 cup mung bean sprouts

100g natural low-fat yoghurt

4 shallots, diced

1 tbsp lemon or lime juice

1 tbsp soy sauce

1 tbsp artificial sweetener or equivalent

12 crips lettuce leaves, washed

Cooking Methods

  1. Flake tuna with a fork then add remaining ingredients, except lettuce leaves. Mix lightly.

  2. Soften lettuce leaves by immersing them in boiling water or microwaving for 10-15 seconds. Trim cores from each leaf.

  3. Spoon approximately two tablespoons of filling on to each lettuce leaf. Roll up firmly.

  4. Chill for at least one hour before serving with fresh wholemeal rolls lightly buttered.
