Mullet Fish and Cucumber Curry Recipe Low Carb

500g mullet fillets, skinned

2 tsp polyunsaturated oil

1 onion, thinly sliced

3 tsp curry powder

1 cucumber, peeled, seeded and thinly sliced

1/2 cup coconut cream

2 tsp lemon juice

ground black pepper

Cooking Methods

  1. Remove bones from fillets, cut into bite-sized pieces.

  2. Heat pan, brush with oil. Saute onion with curry powder for 2 minutes.

  3. Add mullet and cucumber and cook for 3 minutes, or until flesh flakes.

  4. Gently stir in coconut cream, lemon juice and pepper. Heat but do not boil.
