SALMON CROQUETTES: 145-ounce can red or pink 5almon, drained, bones discarded if desired and skin discarded 1/4 cup chopped red onion 1/2 cup chopped red bell pepper 1/3 cup crushed fat-free, no-salt-added crisp bread Egg substitute equivalent to 1 egg, or 1 large egg 1/2 tablespoon snipped fresh dill weed or 1/2 teaspoon dried dill weed, crumbled 1/4 teaspoon pepper 2 teaspoons canola oil

Cooking Methods
Heat a 12-inch skillet over medium-high heat. Pour in the oil and swirl to coat the bottom. When the oil is hot, cook the croquettes for 5 to 6 minutes, or until golden brown on both sides, turning once. To serve, place the croquettes on plates. Spoon the sauce to the side or on top of the croquettes. |
