Seafood Crisp Recipe

500g marinara mix

2 cups cooked macaroni or short pasta

1/2 cup grated light cheese

125g cottage cheese

1 medium onion, finely chopped

3 medium tomatoes, sliced

1/2 cup white wine or water

440g canned cream of chicken soup

dash tabasco or chili sauce

2 slices wholemeal bread

2 tbsp reduced fat margarine

Cooking Methods

  1. Layer marinara mix, pasta, half the grated cheese, cottage cheese, onion and tomatoes in a lightly greased baking dish.

  2. Combine wine, soup and chili sauce then pour over other ingredients.

  3. Spread bread with margarine and cut into small cubes.

  4. Top casserole with bread cubes and remaining grated cheese.

  5. Bake in a hot oven 200 degree Celsius for 30-35 minutes or until topping is crisp and browned.

  6. Serve with a salad.

Marina mix is available at fresh fish and seafood shops. For this delicious diabetic seafood recipe, if desired, you can substitute with any tinned fish or cooked fish fillets.
