Shrimp Fajitas

1 lb medium shrimp, peeled and deveined

1 tsp canola oil

2 green bell peppers, sliced into thin strips

1 medium onion, sliced into thin strips

1/4 cup water

1/2 Tbsp chili powder

1/4 tsp cayenne pepper (optional)

1/4 tsp cumin

1/2 tsp salt (optional)

1/2 tsp ground black pepper

10 6-inch whole-wheat tortillas

Cooking Methods

  1. Coat a large nonstick skillet with cooking spray. Cook shrimp over medium heat for about 2 minutes. Remove from pan and set aside.
  2. Add oil to the pan and heat. Add peppers and onion; cook about 7 minutes or until they begins to brown. Add shrimp and any juices back to pan.
  3. Add water and spices, including salt (optional) and pepper. Bring to a boil; reduce heat and simmer until water evaporates. Server with tortillas.
