1/3 cup fat-free or light sour cream 1/2 tablespoon olive oil 2 teaspoons Dijon mustard 1/4 teaspoon salt 1/4 teaspoon pepper 1/2 cup yellow cornmeal 1 teaspoon paprika 1 teaspoon Cajun seasoning blend 32 medium oysters, drained (about 1 pint/1 pound) 2 tablespoons canola oil

Cooking Methods
Heat a 12-inch nonstick skillet over medium-high heat. Pour the vegetable oil into the skillet and swirl to coat the bottom. Cook the oysters for 4 minutes, turning frequently. To serve, place 8 oysters on each plate. Serve with the Sour cream mixture as a dipping sauce.
