1/3 cup fat-free or light sour cream

1/2 tablespoon olive oil

2 teaspoons Dijon mustard

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 cup yellow cornmeal

1 teaspoon paprika

1 teaspoon Cajun seasoning blend

32 medium oysters, drained (about 1 pint/1 pound)

2 tablespoons canola oil

Cooking Methods

  1. In a small bowl, whisk together the sour cream, olive oil, mustard, salt, and pepper. Set aside.
