Baked Beets Recipe Low Carb

4 6-oz beets

2 tsp olive oil

1 clove garlic, minced

Fresh ground pepper to taste

  1. Preheat the oven to 400 degrees.
  2. Wash the beets and cut the stems to within 2 inches of the bulb. Place the beets in a baking pan and bake 50-60 minutes until tender.

  3. Slice off the top and root end so the beets can stand on a plate. With a fork, mash down on the center part of the beet. Sprinkle with garlic, olive oil and pepper.
