Braised Artichokes with Wine, Garlic and Olive Oil Recipe

8 medium artichokes

3 cups white wine

1 cup olive oil

6 cloves garlic

8-10 sprigs fresh thyme

1 lemon, halved and seeds removed

1/2 tsp salt

Cooking Methods

  1. Cut off the fibrous part of stem and discard. Remove and discard the darker and toughest leaves. Using as sharp knife, trim away the tops of the leaves. Scoop out inside purple leaves and hairs with a small soon. To prevent discoloration, store artichokes in water with a little lemon juice until needed.
  2. Place artichokes in a large pot. Combine white wine, olive oil, garlic, thyme, lemon and salt. Bring to a simmer. Liquid should cover about 3/4 of the artichokes.
  3. Cook covered at low heat for about 30 minutes or until artichokes are tender.
