Cheese Grits with Turnip Greens Recipe

3 cups water

1/2 tsp salt

1 cup grits

1 tbsp olive oil

2 large cloves garlic, minced

4 cups frozen chopped turnip greens, thawed and squeezed dry

or 1 bunch fresh greens, chopped

1 cup packed, grated, low-fat sharp cheddar cheese

Dash hot pepper sauce

Cooking Methods

  1. Preheat the oven to 375 degrees. Bring the salted water to boil in a medium saucepan. Gradually whisk the grits into the water.
  2. Reduce the heat to low, cover and cook until the grits are tender and the mixture is thick. You can stir the mixture occasionally.
  3. Meanwhile, heat the oil in a large skillet over medium heat. Add the garlic and saute for 1 minute. Add the greens and saute 2 more minutes.
  4. Add the greens, 3/4 cup of the cheese, and the hot pepper sauce to the grits. Transfer to a 1 1/2 quart nonstick casserole or souffle dish. Sprinkle the remaining 1/4 cup cheese on top.
  5. Bake until the cheese melts and the grits are heated through, about 15 minutes.
  6. Let stand for 5 minutes before serving.

You could further improve this fresh vegetables recipe to provide healthier diets for diabetics. Simply add 2-4 tbsp unprocessed, uncooked wheat bran and 1 tbsp water to every 1/4 cup dry grits.
