Creole Peas and Okra Recipe

 

Ingredients

2 Tbsp corn oil

1 cup diced celery

1 cup diced bell pepper

1 cup diced onion

2 medium hot peppers , chopped

2 16-oz cans chopped tomatoes with juice

3 cups cooked black-eyed peas with juice

2 10-oz pkgs frozen cut okra, partially thawed, or 1 lb fresh okra, sliced

½ tsp salt

Methods

  1. Heat the oil in a medium skillet and saute the celery, bell pepper, onion, and hot pepper until tender.
  2. Add the remaining ingredients and bring to boil. Lower heat and simmer about 15 minutes until okra is tender.
