Lemon-Mint Sugar Snap Peas Recipe Low Carb

8 ounces sugar snap peas, trimmed

1/2 tsp grated lemon zest

2 tbsp fresh lemon juice

1 tbsp light tub margarine

1/8 tsp salt

1/4 cup chopped fresh mint or snipped fresh cilantro

Cooking Methods

  1. Set a steamer basket in a small amount of simmering water in a medium saucepan. Put the peas in the basket. Cook, covered for 5 minutes, or until just tender-crisp. Pour into a medium bowl.

  3. Gently stir the lemon mixture and mint into the peas.
