Preheat the oven to 375 degrees.
Using the grater attachment on a food processor or a box grater,
grate the potatoes and place them in a medium bowl.
Add the remaining ingredients
except cooking spray and combine well.
Heat a large non-stick skillet over
medium heat. Spray the skillet with cooking spray.
In 1/4-cup batches, place mixture
in the skillet, making sure each potato pancake is evenly spaced.
Cook the pancakes on each side until golden brown in color.
Transfer the potato pancakes to a
baking sheet and place in the oven for 20 minutes or until fully
cooked inside and out.
Serve immediately with a side of
unsweetened applesauce or fat-free sour cream (optional).
