Low-Fat Ratatouille Vegetable Recipe Low Carb

1 tbsp olive oil

1 cup chopped onion

2/3 cup finely chopped bell pepper

1 clove garlic, chopped

1 1/2 lb eggplant, peeled and cut in 1/2-inch cubes

1 lb zucchini, unpeeled and cut in 1/2-inch slices

1 tsp basil

1 tsp marjoram

3 medium tomatoes, peeled and quartered

1/2 tsp salt

1/4 tsp pepper

2 tbsp Parmesan cheese

Cooking Methods

  1. Heat the oil in a large skillet and saute the onion, bell pepper and garlic for 3-4 minutes.

  3. Garnish with Parmesan cheese to serve.
