Low-Fat Red Rice Recipe

 

Ingredients

4 slices bacon

1 large onion, chopped

3/4 cup chopped celery

3/4 cup chopped bell pepper

1 cup uncooked long-grain or brown rice

1 16-oz can chopped whole tomatoes, undrained

1/2 cup water

1/2 tsp salt

1/4 tsp pepper

1/4 tsp cayenne pepper

1/8 tsp hot pepper sauce

Cooking Methods

  1. Preheat oven to 350 degrees. Cook the bacon in a skillet until crisp. Remove the bacon, drain well, crumble and set aside.
  2. Add onion, celery and bell pepper to the pan and saute until the vegetables are tender. Stir in the remaining ingredients. Spray a 1 1/2-quart baking dish lightly with nonstick cooking spray and add the rice.
  3. Bake, covered for about 40 minutes or until rice is tender, stirring after 15 minutes.

Fun Facts / Cooking Tips

You can use lean ground turkey instead of bacon in this recipe if you prefer.
