Low-Fat Spicy Baked Beans Recipe

 

Ingredients

2 cups dry navy beans

1/2 cup chili sauce

1 tsp vinegar

1 medium onion, sliced

1/4 lb lean boneless pork, cut in small cubes

1 tsp dry mustard

1/4 cup dark molasses or sorghum

Cooking Methods

  1. Rinse and sort the beans. Cover with water to a 2-inch level above the beans and soak overnight.
  2. The next day, drain the beans and add fresh water to a 2-inch level above the beans. Add the pork, cover and simmer over low heat for about 1 hour, or until just tender. Drain.
  3. Preheat the oven to 300 degrees. Pour the beans into a 2-quart casserole dish. Combine the remaining ingredients and add to the beans. Mix well, then cover and bake for 4 hours.

Although this vegetable recipe is suitable for diabetics as it is low fat and high fiber, baked beans are still high in calories. Try using demitasse cups to help with portion control.
