Mushrooms Marinated in Lime and Soy Sauce Recipe Low Carb

1 pound whole button mushrooms

1/4 cup light soy sauce

1/4 cup fresh lime juice

1 tbsp olive oil

1/4 tsp crushed red pepper flakes

Vegetable oil spray

2 medium limes, quartered

1/4 cup snipped fresh parsley

Cooking Methods

  1. In a large airtight plastic bag, stir together the mushrooms, soy sauce, lime juice, oil and red pepper flakes. Seal the bag and turn to coat the mushrooms evenly. Refrigerate for about 8 hours.
  2. For a side dish, preheat the broiler. Lightly spray a nonstick baking sheet with vegetable oil spray. Drain the mushrooms, discarding the marinade. Arrange the mushrooms in a single layer on the baking sheet.
  3. Broil the mushrooms 4-6 inches from the heat for 6 minutes, or until beginning to brown, stirring occasionally.
  4. For an appetizer, drain the mushrooms, discarding the marinade.
  5. For both the broiled and the raw mushrooms, squeeze the lime over the mushrooms. Sprinkle with the parsley.
