Oven-Fried Green Tomatoes Recipe Low Carb

1/4 cup stone-ground cornmeal

3 tbsp unprocessed, uncooked wheat bran

1/4 tsp salt

1/4 tsp pepper

1 egg, well-beaten, mixed with 1 tbsp water

1 tbsp canola oil

2 large green tomatoes, cut into 1/2-inch slices

Cooking Methods

  1. Preheat oven to 450 degrees. Combine the cornmeal, bran, salt and pepper. In a separate bowl, mix the egg and oil.
  2. Dip the tomatoes in the egg mixture, then into the cornmeal mixture. Place the coated tomato slices on a nonstick cookie sheet and bake for 35-40 minutes until golden brown.
