Peas with Caramelized Pearl Onions Recipe Low Carb

2 tsp olive oil

6 oz pearl onions, skin removed

2 tbsp fortified chicken stock

1/2 tsp salt

Pinch black pepper

1 cup water

8 oz peas, fresh or frozen

Cooking Methods

  1. Preheat a skillet over medium-high heat. Add the olive oil and then the onions. Brown the onions on all sides.
  2. Add the chicken stock, salt and pepper. Allow the liquid to absorb into the onions. Continue cooking until almost all of the liquid is absorbed. Set aside.
  3. In a medium pot, bring the water to a boil. Add the peas. Simmer uncovered for 3-5 minutes or until the peas are tender.
  4. Drain the peas and combine with the reserved caramelized onions. Serve immediately.
