Be sure the asparagus is completely
dry. Arrange the asparagus in a single layer on a baking sheet.
Sprinkle with the pecans. Lightly spray with the vegetable oil spray.
Bake for 10 minutes, or until the
asparagus is tender-crisps and the pecans are browned.
In a small bowl, stir together the
sugar, vinegar and salt.
Remove the asparagus from the oven.
Pour the sugar mixture over the asparagus. Stir gently.

Another diabetic vegetable recipe. The specialty of this
healthy dish is the roasted pecan. However, be sure to
use pecan chips rather than chopped pecans. The chips
are much smaller, when roasted, distribute their nutty
flavor more evenly over the asparagus.
