Roasted Carrots and Parsnips with Garlic and Thyme Recipe Low Carb

1 cup carrots, peeled and diced

2 cloves garlic, minced

2 tbsp olive oil

1 tsp salt

Pinch black pepper

2 tsp minced fresh thyme

Cooking Methods

  1. Peel the parsnips and carrots and cut into medium chunks. Add to a large bowl. Add remaining ingredients and toss to combine. Place on a baking sheet and roast at 375 degrees for 45 minutes or until fully roasted.
